Custard, not soft serve
Frozen custard is ice cream made with egg yolk and churned slowly with little air, so it comes out dense and is served fresh, often with a flavor of the day. It is a Milwaukee-area tradition, and stands all over the state post a daily flavor calendar. Soft-serve and hard ice cream shops are not on this list unless they make custard.
15 of the 28 stands have a founding year we could verify. The oldest: Gilles Frozen Custard in Milwaukee (1938); Leon's Frozen Custard in Milwaukee (1942); Leon's Frozen Custard in Oshkosh (1947); Gilles Frozen Custard in Fond du Lac (1949).
How the list was built: stands were confirmed open with a 2025 or 2026 source, such as their own flavor calendar, menu or a dated news story. A stand is in only if it actually sells frozen custard. Chains with five or more locations in the state are left out. Many stands close for winter, so check their hours before you go.
